Garlic is a plant of the Liliaceae and Allium genus, and its tender seedlings, flower stems, and bulbs are edible. Garlic is rich in allicin, which forms a volatile sulfide called allicin under the action of alliinase. It has a special spicy taste and has appetite enhancing, antibacterial, and bactericidal effects. Processing garlic into dried products through modern techniques not only preserves its original flavor and nutritional components, but also softens the unique aroma of garlic before consumption, greatly prolonging its storage time. Currently, dried garlic products are mainly used in the production of household seasonings and health products.
Dried garlic products are mainly divided into dehydrated garlic slices, garlic powder, and garlic granules in form.
Today we will introduce the processing technology of dehydrated garlic slices:
1. The processing of raw garlic includes five steps: selecting ingredients, cutting stalks, peeling and dividing the skin, peeling the garlic cloves, and selecting. Material selection requires manual operation. Pour the garlic onto the garlic selection table, pick out the garlic heads that are infested with insects and moldy one by one, and eliminate them. During the selection process, it is also necessary to remove garlic that is too small, as after the slicing process, the area of garlic slices is also small, which affects the quality of the finished product.
2. To complete this process, it is necessary to use a dividing machine and a blower. After the garlic is cut, it is poured onto a lifting machine and fed into the dividing machine through a conveyor belt. The dividing machine uses the rubbing force generated by the upper and lower rubber belts with different speeds to divide the garlic into cloves.
3. After splitting, the garlic cloves and outer skin are mixed together, so how do you separate them? The strong wind force generated by a blower. Because the specific gravity of garlic cloves is greater than that of garlic peels, which means that garlic cloves are heavier and the outer skin is lighter, and the garlic peels can be removed with wind power. The garlic peels that have not been removed need to be manually picked out.
4. The divided garlic cloves are also attached to a layer of garlic skin, which is tightly attached to the garlic meat and needs to be removed before processing. The dry peeling process is used to heat the surface of the garlic cloves using a drying machine. When the garlic meat and skin start to loosen, high-pressure gas is used to directly blow off the outer layer of the garlic cloves and the transparent film attached to the garlic cloves.
5. Turn on the power supply of the peeling machine and set the working pressure and temperature of the peeling machine. The specific settings of these two indicators are crucial and need to be based on long-term practical experience. Generally, there is a designated range, with a working pressure of 9-11 kgf/cm2 and a temperature of 45-50 ℃. When the pressure and temperature rise to the specified range, pour the garlic cloves into the peeling machine, cover the lid, activate the work switch, and the peeling machine will automatically remove the garlic cloves. To ensure product quality, the peeled garlic cloves need to be selected.
6. Selection refers to picking out garlic cloves that are moldy and saccharified. Garlic cloves that have not been peeled should also be picked out and peeled again. After the above steps of processing, the garlic cloves finally revealed their smooth and crystal clear garlic flesh. The processing of dried products can be said to have completed the basic part, and now we will proceed to the actual processing of dehydrated garlic slices
